Cajun Chicken with Pomegranate-Mango Chipotle Sauce

Cajun Chicken
  • Chicken Thighs
  • Cajun Seasoning
  • Butter
  • Pomegranate-Mango Chipotle Sauce
  1. Pre-heat oven to Broil
  2. Rub butter all over the outside of your chicken
  3. Top generously with your cajun seasoning
  4. Broil for 10-12 minutes per side, flipping chicken once
  5. Check the temperature on your chicken - cooking is complete when the temperature reaches 180 degrees or higher **Note** Miniumum cooking temperature for Chicken breast is 165 degrees and for Chicken thighs is 175. I like to get mine to 180, because I have little kiddos
  6. Remove from oven, and LET REST for 10 minutes. Letting the chicken rest is really important and keeps all those amazing juices inside each bite.
  7. Serve with Pomegranate-Mango Chipotle Sauce
