Ok, so I tried something completely new this week. Cajun Chicken with Pomegranate-Mango Chipotle Sauce. When I first saw the sauce, I was skeptical. But, it was really good! You only need a little bit of the sauce to really get a good flavor in your chicken. I’ve recently started broiling my chicken and I absolutely love it this way.
When I cook chicken on the grill, it would always get several charred pieces. I know, some people like the charred pieces – especially, if you are anything like my grandmother. I usually tell the cook that they just need to burn hers for her to be happy! LOL
I love cooking chicken in a skillet, but it just takes sooooo long to get each piece cooked all the way through. We all know that you can not serve raw chicken – so dangerous! And baking my chicken… it just seems like it drys out a lot quicker and the skin doesn’t get very crispy. So, broiling the chicken is my cooking method of choice. I hope you enjoy this recipe! I served mine with Creamy Mashed Potatoes and Simple Chicken Gravy.
